Clean Clusters

Our Chardonnay plan for 2020 is a move toward an even more delicate and citrusy wine. To accomplish this, we start with the cleanest possible clusters, with no damage, mold or sunburn. We've left a little more side leaves and more canopy above for a nice shade for about 4-5 hours of mid-day heat. We'll be picking just a little less ripe for more natural acids. In the winery we'll whole cluster press with our new computer-controlled press for just the right extraction, ferment on native yeast for a full expression of our site and keep the fermentation a little on the cool side to keep the flavors light and aroma expressive. I'm so excited!
